It is amazing that I often tell my clients not to eat grains, sugars and potatoes, yet I have never written about potatoes. You should stay away from potatoes because of what they do to your insulin. Want to see some disheartening facts? In 2007 they said we averaged 127 pounds of potatoes (sugar was 136 pounds, which together just really shows why our health is spiraling downwards). When you look at the glycemic load or index in sugar, it is like eating pure sugar. Yep might as well just pour the sweet granules down your throat. Because your sugar spikes so fast, your insulin spikes too. This puts us at risk for insulin resistance. This can lead to a host of problems:
- Type 2 Diabetes
- High Blood Pressure
- High blood cholesterol
- Systemic inflammation
- Skin tags
- Breast, Colon, and prostate cancers
Another strike against potatoes are antinutrients like saponins. Potatoes saponins can be especially toxic as once it gets into the bloodstream; the glycoalkaloids can inhibit acetycholinesterase (an enzyme needed for nerve impulse conduction). As well as increase intestinal permeability.
Not all tubers are to blame. Besides potatoes and cassavas, most other roots and tubers are a go. Even sweet potatoes, which has a slightly higher glycemic load, is fine for the normal weight, athletic types, especially to recover glycogen after workout. Just drop the French fries, chips, mashed potatoes, and baked potatoes down.
