Recipes for Your Loves

SAMSUNGTomorrow is Valentine’s Day, surprise your loved one with something sweet, yet healthier for them to just generic store bought sugar ridden chocolates. Here I have assembled some possible Love Day Treats. I have to admit that I personally am partial to the bacon bouquet and would not mind it one bit if a guy showed up to my front door with some.

SAMSUNGChocolate Covered Strawberries

  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup virgin coconut oil
  • 1/2 cup raw honey
  • Optional: chopped pecans, chopped dark chocolate bar (I use an 86%)

To Make: Process all ingredients The best assembly method I found was to spoon some chocolate, then swirl the strawberry on the spoon. Sprinkle with nuts or additional chocolates. That’s it! As you can see my taste-tester nephew Trenton loved these, we had to cute him off at 5 otherwise he would have eaten the whole plate.

2013-02-13Raspberry Cupcakes

  • 1/2 cup coconut flour
  • 1/2 tsp sea salt
  • 1/4 tsp baking soda
  • 6 eggs
  • 1/2 cup almond oil
  • 1/2 cup raw honey
  • 1 tbsp vanilla
  • 1/3 cup unsweetened shredded coconut
  • ProDessert Pudding
  • Raspberries

To Make: Mix the flour, salt, soda and coconut in one bowl. In another bowl blend eggs, oil, honey, and vanilla. Combine the two bowl. Pour into greased cupcake pans. Bake at 350 until a toothpick comes out cleanly. Allow to cool. Meanwhile make ProDessert Pudding by mixing with water. Ice cupcakes and decorate with raspberries!

2013-02-13Black Forest Cheesecake
Cheesecake

  • 3 packages cream cheese
  • 4 eggs
  • 1 tbsp vanilla
  • 1/2 cup unsweetened cocoa
  • 1/2 cup raw honey

Topping

  • frozen cherries
  • 1/2 cup honey
  • 1/4 cup unsweetened cocoa

To Make: Blend all the cheesecake ingredients. Bake at 350 for 40 minutes or so. As you’ll notice I have a nifty heart shaped pan perfect for the occasion. Top with cherries. Process honey and cocoa. Drizzle over the top and you have a ridiculously awesome black forest cheesecake.

SAMSUNGPB Bacon Truffles

  • 1/2 cup almond butter
  • 1 1/2 tbsp almond flour
  • 2 pieces bacon (cooked and chopped on the side)
  • 2 tbsp coconut oil
  • 2 dark chocolate squares chopped

To Make: Mix all ingredients minus bacon. Fold in bacon. Form into balls, freeze. Roll in the same chocolate as above: 1/2 cup raw honey, 1/4 cup unsweetened cocoa, and 1/4 cup coconut oil.

Cookie Dough Truffles

  • 1/2 cup almond flour
  • 1/4 cup Stevia
  • 2 tsp vanilla
  • 6 tbsp coconut milk
  • 2 tbsp water
  • chopped chocolate

To Make: Mix all ingredients. Drop small spoonfuls and freeze. Drizzle with the same chocolate. truffles 2

Almond Crunch Truffles

  • 1 cup dates (pitted)
  • 1 cup chopped almonds
  • 1/2 cup unsweetened cocoa
  • pinch sea salt
  • 2 tbsp raw honey
  • Additional 1/4 cup almonds to roll in

To Make: Process all ingredients. Roll into balls. Roll in extra nuts. Serve chilled.

  • Bacon
  • Toothpicks
  • Flower Stems

To Make: Roll bacon. Secure the bottoms by crossing toothpicks. Place on oven rack with a foiled baking sheet below. Bake at 400. Cool. Remove flowers from stems. Replace with bacon. Boom a magical bacon bouquet.
