One of the biggest pluses of being home is family time. Anyone who knows my mother and I know we tend to be and act more on the lighthearted side. Dad frequently assesses our ‘silliness.’ What can we say we’re big kids. But it is nice to use this towards quality time together with my grandma. A pause from thinking about life, work, bills, and altogether impending doom. A moment where we are FREE. Free to relax together. To watch the Big Bang Theory. To lounge in onsie footed pajamas (me, although my mother would love a pair, she looks at mine with the utmost longing). To sit down at the table with a candle lit and a quality meal on the table. To have a girls night, you know pizza, ice cream and a television series. Being ‘normal’ doesn’t have to wreck your eating program. Grandma and I conspire together, pooling our creativity to come up with the ultimate supreme pizza toppings. We tackle grocery shopping together and we come home so I can put it together. This is the result and of course Butter Pecan Ice Cream to boot. Take pride in family time, enjoy the moment and create some better meal options.
- Cauliflower Crust (1 cup cauliflower rice, 1/3 cup shredded cheese, 1 egg, Italian seasonings)
- Tomato sauce
- Green Peppers
- Red Chiles
- Artichoke Hearts
- Shredded Cheese
To Make: I get so many questions about what is cauliflower rice. Sorry to say if you go to the grocery store requesting it, they’re not going to have a clue and you’ll leave empty-handed. Simply buy a head of cauliflower and grate it in a food processor (or finely chop if you are processorless). Throw this in a bowl with cheese, egg and seasoning. Now if you are going for dairy-free I know there are some dairy-free cheeses out there and I have seen (okay I’ve pinned them) recipes for some cheese alternatives. Pat onto a greased pizza pan. Bake at 415 until golden brown. Put your toppings on, place back in the oven. Let the cheese melt. Serve and enjoy! Skies the limits with toppings.
Butter Pecan Ice Cream
- 1 tbsp butter (I guess you could use coconut ghee but that kind of takes away from it being ‘butter’ pecan)
- 1/3 cup pecans
- 2 eggs
- 1 cup raw honey (or maple or coconut nectar)
- 2 cups coconut milk
- 1 tsp vanilla
To Make: Toss pecans in butter. Set aside. Heat the remaining ingredients minus the vanilla at a low heat. Bring to a simmer, remove, add pecans and vanilla. Pour into a glass bowl and freeze. As I do not own an ice cream maker, I let it freeze before I remove it and run it through the processor to make it creamy. Boom Girls Night Complete!
