Recipe 14: Butternut Mac N Cheese

    1/4 cup heavy cream
  • 1/2 cup broth
  • chopped onion
  • bacon
  • 1 cup butternut squash puree
  • 1/2 chopped apple
  • 1/3 cup shredded cheese
  • 1 1/2 cup cauliflower rice (grated cauliflower)

To Make: Saute onions in butter. Roast, mash, and puree squash. In a saucepan mix broth, cream, and rice. Add in the puree with onions and apple. Lastly stir in cheese. Season to taste, I added a bit of nutmeg and cinnamon with salt. Serve tossed with bacon.
