Recipe #13: Butternut Chips

Butternut Chips

  • Butternut squash
  • Raw butter, melted
  • Rosemary
  • Salt

To Make: thinly slice squash (note mandolin would be ideal for this kind of job, but for the old school slicerless like myself a good old knife and concentration works well). Boil water, toss squash in for a minute or two. Strain, pat dry. Spray parchment, season, bake at 350 for 20 minutes (cook time depends on the thinness of your squash. Keep an eye on them, making sure to turn over and keep them a nice golden brown. Enjoy!
