- 2 cups coconut crystals
- 3/4 cup butter
- 2/3 cup coconut milk
- 1/2 package ProDessert vanilla pudding
- 3 1/2 cup unsweetened shredded coconut
- 1/2 tsp vanilla
- 1/4 cup pumpkin puree
To Make: in saucepan heat butter, crystals and milk. Boil for 2 minutes and remove from heat. Stir in pudding and puree. Add the last two ingredients. Drop onto parchment paper. Allow to set, I put mine in the freezer for a bit.
