Yes I am still using that snickerdoodle recipe from the other day. My beautiful best friend Tab just joined me at the quarter century mark. As a fellow health consious youngen, I decided to make her a ‘special’ birthday treat that she could eat and not feel like she’s completely wrecking her ‘diet’ (her word not mine, I am fond of the word lifestyle).
- Snickerdoodle dough
- Chocolate ProDessert Pudding
- Whip Cream (feel free to make your own: can coconut milk, 28 drops stevia, 2 tbsp coconut oil, 1 egg, 1 tbsp vanilla processed and chilled overnight)
To Make: prepare your snickerdoodle dough. Roll in cinnamon and coconut crystals. Pat evenly into a greased pie pan. Bake about 12 minutes. Let cool. Mix ProDessert either with water or coconut milk (about 1/3 cup). Fold into whip cream. For the chocolate drizzle I melted some of the peppermint chocolates I still had in the freezer. Bam, birthday surprise!
