Recipe #4: Pumpkin Risotto

2012-12-04 08_58_14Finally a savory dish (well at least one that is more savory than sweet)! I’m on a pumpkin kick what can I say. Cauliflower is a magic vegetables. I’ve prepared the florets in so many hidden ways and snuck them into my nephews meals so many times, in many different disguises (cauliflower brownies? Yes that has happened).

Pumpkin Risotto

  • 1/2 cup broth
  • 1/2 cup water
  • 3 tbsp onion, diced
  • 1/4 tsp rosemary
  • 1 tbsp EVOO
  • 3/4 cup pumpkin puree
  • 1 cup cauliflower rice
  • 1 tbsp butter

To Make: heat broth and water. Saute onions in olive oil. Add pumpkin, rosemary and cauliflower rice. Add in 1/3 of the broth, letting it absorb. Add the rest, plus 1 tbsp of butter. Simmer a bit and serve (PS I added in some chopped bacon)
