Paulins Pantry: Zucchini Lasagna

I am on a role of actually posting pantry videos! When I returned, we had to celebrate my dear friend Shadow’s birthday. I made zucchini based lasagna for the evening. Here is the video and I’ll warn you there is a special guest appearance by my nephew Trenton.

Zucchini Lasagna

  • Zucchini, cut lengthwise
  • Ground meat (I had elk from Dr Sharifi)
  • Sliced Mushrooms
  • Chopped Bacon
  • Tomato sauce
  • EVOO for brushing
  • shred cheese

To make: Brown meat with bacon and mushrooms. Season to taste, I used Italian seasoning, cumin, and sea salt. Add tomato sauce. Meanwhile slice zucchini and thin strips. Gather a pan, layer zucchini, brush with olive oil (or melted butter), layer with meat, and sprinkle with cheese. Keep layering until you reach the top of the pan. Bake at 350 until the cheese is melted. As my friend Chelsey said, it was ‘AMAZING’. Happy Birthday Shad and cheers to another healthy dish!
