Eating with Brittany

Today I have been a cooking maniac! After a couple days out of my groove and mountain withdrawals (there was an instance when I couldn’t even make brownies), I was back with a vengeance today, cooking up a storm for my friends and family. First off breakfast. The most amazing thing in the morning, is laying in bed with your mom, sister, and two nephews, especially this time of year I know this is important and I am so thankful for these little moments. In celebration I made some fried apples and bacon. Next, all week I’d been planning a picnic. Saturday’s are moms days that she likes to spend with grandma. Recently my grandmother completed her second successful knee surgery. She has done exceptionally well in her rehab and recovery. To celebrate we had the picnic to highlight her progress, our pride in her, for her being an 1 inch taller, for her general awesomeness! When I asked her what picnic food she’d like, she requested fried chicken and potato salad. Naturally I was up for the challenge to take something traditional and making it better (keep scrolling I promise it’s there). Lastly, girls night with my friends. Pizza and cookies! Breakfast with Brittany

  • Bacon (REAL bacon like from a pig)
  • Apple, sliced
  • Almonds
  • Butter
  • Cinnamon
  • raw honey (local raw honey if you can)

How to Make: In a skillet melt butter. Toss in apples. Season with honey and cinnamon. Sprinkle almonds on top. Leave on medium heat. Meanwhile put the bacon on. Cook apples to a golden brown, remove and eat with your crispy bacon. Simple, quick and absolutely delicious!

Fried Chicken

  • Chicken
  • Pork rinds, crushed (could also just dust with coconut flour)
  • Coconut Oil
  • Egg

To Make: Scramble egg. Classic assemble: dip breasts in eggs, pork rinds, and place in heated coconut oil. Fry on all sides until it is no longer pink and the middle, TADA you have fried chicken!

‘Potato’ Salad

  • Cauliflower (I admittedly used a bag of frozen and just nuked it)
  • Celery, chopped
  • Onion, chopped
  • Mayo (homemade would be fantastic here)
  • Crumbled bacon
  • Chopped pecans
  • 4 hard boiled eggs

To Make: chop eggs and stir all ingredients together. You can also add a tablespoon of mustard but I didn’t remember this until we were seated. To complete the day we had them on Mickey plates and goblets with fresh Cherry Ice Tea and lit candles.

Pizza

  • Cauliflower Crust (1 cup cauliflower rice, 1/2 cup shredded cheese, 1 egg)
  • Peppers
  • Onions
  • Pepperoni
  • Shredded cheese
  • Crushed tomatoes

To Make: Pat crust in pan, bake at 415 for until golden brown. Spread tomatoes, pepperoni, onion, peppers and cheese. Let cheese melt and you’ve got a yummy fatty, protein rich meal, but low carb disc!

Salted Caramel Chocolate Chip Cookies

  • 1 cup Coconut Flour
  • 1/2 cup Chocolate chips
  • 1/2 cup honey
  • dash salt
  • 4 eggs
  • 1/2 T vanilla
  • 1/2 cup melted coconut oil

To Make: Mix all ingredients minus the cocoa nibs. Fold in nibs. Bake at 350. For caramel, mix 1/2 cup honey and 3 tablespoons of butter. Once boiling, simmer. Remove from heat and add vanilla. Drizzle over the top and eat!
