Bonus Monday Recipe: Pumpkin Spice Latte

Pumpkin Spice LatteInspired by my lovely cousin Jacki: that wonderful cozy time of year is coming, Autumn. The season of comfort with great temperatures, colors, plaid and fire side nuzzling. It is also the time where my Facebook (and myriad of social networking sites) will be be raided with posts about the deliciousness of Starbuck’s Pumpkin Spice Latte. Insert Jacki’s post appearing on my feed: pumpkin spice release coinciding with the beginning of a Paleo challenge. Wait, I eat Paleo-similiar. Wait, last October I did a cooking class entirely of pumpkin recipes. Wait, one of these recipes was for a Pumpkin Spice Latte. I can help, I can share. I know this is a beloved drink, so why not indulge without the guilt. That’s my job it’s what I do, adopt traditional foods and make them better for you (which don’t compromise in flavor). So without further babble here is an option for a DIY Pumpkin Spice Latte:

  • 2 cups unsweetened coconut milk (or maybe almond)
  • 2 tbsp 100% pumpkin (not pumpkin pie)
  • 2 tbsp Stevia (or raw local honey or a good maple syrup)
  • 2 tbsp vanilla
  • 1/2 tsp pumpkin pie spice
  • 1/2 cup coffee

To Make: heat up your milk, sweetener, and pumpkin until it’s steaming. Remove it from the fire, add in your spice and vanilla. Toss it in the blender (or whisk) to get it nice and foamy. Add it to your coffee and bam you’ve got a pumpkin spice latter. I would probably sprinkle cinnamon over the top for dramatic effect. Want a little whip on top? Refrigerate some canned coconut milk (at least 2 hours), remove the cream from the top, whip it with a little cinnamon and a scant 1/8 tsp of vanilla and you’ve got yourself a delicious topping. Don’t deny yourself this fall, indulge and fill great by tweaking your favorite things into something you can drink with pride, not only because you made it yourself, but because it’s good for you (plus think of the savings of making yourself, rather than buying a daily cup at Starbuck’s).
