Recipe: Browkies

I’m just spoiling you guys the last couple of days with recipes, but special occasions call for recipe experiments. Today is my beautiful sister, Amanda’s birthday. Age is irrelevant, but any event to try out a new recipe is a must. Although my mother made her fruit pizza (which you can also check out today on our March Cooking Class Recipes post), I had to upstage her with a hybrid decadent dessert: a browkie. You may be asking yourself what in the world is a browkie? Well it is 1/2 cookie 1/2 brownie. I know, deadly sounding right? Well I have to tell you that it is gluten free and refined sugar free! Alright, I’m done teasing here is the recipe.

BC Browkies (Sinfully Good Brownie Cookie Hybrid)

For the brownie:

  • 1 1/2 cup Almond Flour
  • 1/3 cup unsweetened cocoa
  • 1/4 tsp salt
  • 2 tsp Baking Powder
  • 1/2 cup Stevia
  • 1 tbsp vanilla
  • 3 tbsp unsweetened Almond Milk

For the Cookies:

  • 2 cups Almond Flour
  • 1/2 cup Stevia
  • 2 tsp Baking Powder
  • 1 tbsp Vanilla
  • 1/8 tsp Salt
  • 3 tbsp unsweetened Almond milk

To Make: Mix the two batches separately. Grease a muffin tin. Press brownie mix, followed by cookie on top. Bake at 350 for about 30 minutes. Cool and remove. Serve! I’m told that they were pretty phenomenal. Happy Birthday Amanda, Love you 🙂

    Hi Brittany! What would be the serving size? What would be the breakdown of proteins, carbs and fats in the serving?

    Hey Mary! If I made this into a batch of 18 then the numbers would be about: 9.5 g of Fat, 1 g of Active Carbs, and 4 g of protein. They are definitely a true fat-burner treat and I hear that they’re really good, I’ll see if mom can bring you guys some for your feast tomorrow!

    These were totally awesome, one of the kids made the mistake of leaving 1/2 of one behind and of course I had to finish it. A must for that family event.
