Marble Cake Recipe

imageSorry for any delay, but this is the recipe for the marble cake that we served in celebration of our new cookbook:

Vanilla Batter:

  • 1/4 cup coconut flour
  • 1/4 tsp baking soda
  • 2 eggs
  • 2 tbsp macadamia (or almond) oil
  • 1/3 cup agave

Chocolate Batter

  • 2 tbsp coconut flour
  • 2 tbsp unsweetened cocoa powder
  • 1/2 tsp baking sod
  • 2 eggs
  • 1 tbsp macadamia nut oil
  • 1/4 cup agave

How to make it:

Preheat oven to 350. Grease baking pan. For the vanilla batter mix flour and baking soda. In a seperate bowl whisk eggs, oil, and agve. Combine the wet and dry ingredients together and set aside. For the chocolate batter blend flour, cocoa powder, and baking soda. In another bowl mix eggs, oil, and agave. Combine the wet and dry ingredients. Drizzle one of the batters into the cake pan and then drizzle in the other. Use a toothpick to swirl the two batters together. Bake for 18-22 minutes or until a toothpick comes out cleanly. Let cool completely before frosting it. For the filling I simply made a ProDessert pudding (mix the package with 1/2 cup water), and added some almond butter and a little whipped cream. Cut the cake in half and spread a layer of filling. The outer icing is simply the vanilla ProDessert pudding with some whipped cream (although with the heat I might suggest using cream cheese, because the whipped cream makes it kind of melty.
