Today we are celebrating the Holiday at my parents house. For those who may not know, my father and sister have Celiacs Disease (they can not eat foods with gluten, found in products with processed flours like breads, pastas, etc). This is right up our alley because we don’t eat grains, so Brittany took full advantage of this and prepared an array of gluten-free-Body-Change-style entrees and desserts for the day that all could enjoy! Firstly we have the Stars and Stripes mini cupcakes (that are refined sugar free as well!)
Strawberry or Blueberry Cupcakes
- 1/2 cup coconut flour
- 1/2 cup agave
- 1/2 cup almond oil
- 1/4 tsp sea salt
- 1/4 tsp baking soda
- 3 eggs
- 1 tbsp vanilla
- 1 cup blueberries or strawberries
- 1 package proDessert pudding
- whipped cream
How to make it: Preheat oven to 350. Combine flour, baking soda and salt in a bowl. In a seperate bowl combine eggs, agave, almond oil, and vanilla. Mix the two bowl together. Fold in the fruit. Bake 15-20 minutes. Let cool for a few hours. She iced these with an agave/heavy cream that made a whipped topping, but that did not hold up well in the heat so I would suggest making a batch of the pudding, folding in the whipped cream and using this as an icing base instead. Decorate with fresh fruit on top and enjoy!

- sliced radishes
- diced cucumber
- diced tomato
- 1/4 cup EVOO
- 1/4 cup Macadamia (or almond) oil
- Italian Seasonings
To Make: simply dice and slice your vegetables. Mix a dressing by combing the oils and seasonings. Toss this in with the vegetables and serve.
We’ve done this cruse several times, but have changed up this recipe by grating traditional white cauliflower with orange cauliflower (more beta-carotene) and used a blended cheese. It was just as yummy as the original.
- 1 cup grated orange/white cauliflower blend
- 1 cup cheese
- 3 egg whites
- Italian seasonings
To make: Mix all the ingredients. Bake at 450 for 15 minutes or until slightly browned on the top. Remove, add topping, bake again until the cheese melts and slice.
