Featured Food: Artichokes

Today’s featured food is one that I don’t actually have much history with, but it is one of the oldest cultivated vegetables. Artichokes is an excellent source of:

  • dietary fiber
  • magnesium
  • chromium

A very good source of:

  • vitamin C
  • folic acid
  • biotin
  • manganese

And a good source of:

  • Niacin
  • thiamin
  • vitamin A
  • potassium

As it is a member of the thistle family, this veggie is also good for your liver. It helps protect against toxins and infection. Don’t forget about all that it does for the digestive system. This includes: acting as a natural diuretic, aiding in digestion, and improving gallbladder function. Interesting is that fresh artichoke come in the carbohydrate form of inulin and have been shown to stabilize blood sugar levels in diabetes.
