Injected Turkey

What’s in it:
Average size Turkey breast
3 tsp extra virgin olive oil
3 tsp butter
Creole seasonings
Garlic powder
Salt & pepper
Chipotle pepper

How to make it:
Mix all the spices, butter and oil in a bowl. Tilt the bowl and fill your injector, place shots evenly throughout the bird. Once it’s full, drizzle the remaining seasoning over the bird. Place in pan, cover sides with aluminum foil to keep it from drying out. Cook at 325° for an 1 1/2 hours. Remove, cool, cut slices, and serve.

Cranberry Relish

  • Package Cranberries
  • 1 Orange
  • 1 Apple
  • 3 stalks Celery
  • 1/2 cup Walnuts
  • 1/2 cup Splenda

 How to make it:

So simple; place all the fruit (skin, peel, and all) and nuts in a food processor. Remove, place in a bowl and mix in splenda with your hands. Let set over night so the juices marry and  then you could serve it with something like the stuffed turkey that I have pictured here. Numbers based on 4 servings.

 Mashed ‘Potatoes’

What’s in it:image

  • Head of Cauliflower
  • Dallop Sour Cream
  • 1 tbsp Cream Cheese
  • Finely chopped Shallots
  • Salt and Pepper to taste
  • 2 tbsp Butter

How to Make It:

Just like cauliflower rice, this is incredibly simple to make. Boil the cauliflower. Remove and strain, pat dry. Place in a bowl with the remaining ingredients. Blend with a hand mixer and that’s it!  You could also bake in the oven for awhile. Numbers based on 4 servings.

 Impossible Pumpkin Pie

What’s in it:

  • 1/4 cup Splenda Brown Sugar
  • 1/2 cup Splenda
  • 1/2 cup Almond Flour
  • 2 tsp Pumpkin Pie Spice
  • 1 tsp Cinnamon
  • 2 tbsp Olive Oil
  • 2 Eggs
  • 1 can 100% Pumpkin
  • 1 1/2 cups Almond Milk
  • 2 tsp Vanilla

How to make it:

Beat all ingredients until smooth. Pour into a 9 inch pie pan (glass works best). Bake at 350 for 30 minutes or so. Chill, cut, and serve.

Cranberry Pumpkin Muffins

What’s in it:image

  • 1 1/2 cup Almond Flour
  • 3/4 cup 100% Pumpkin
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 3 Eggs
  • 2 tbsp Honey
  • 1/4 cup Splenda Brown Sugar
  • 1 tsp Pumpkin Pie Spice
  • 1 tsp Vanilla
  • Pinch of Salt
  • 1/2 cup chopped Cranberries

How to make it:

Preheat oven to 350. Mix together all the ingredients except for the cranberries. Fold in the cranberries. Spoon into greased muffin tins. Bake for 25 minutes.
