Stuffed Turkey Roll



What’s in it:
Turkey breast (I cut mine right off the carcass)
Turkey skin
1/2 cup chopped onion
1/2 cup chopped mushrooms
1/2 cup chopped yellow peppers (or whichever you prefer or nix them if you don’t like them)
4-5 cloves garlic
Salt and pepper

How to make it:
Preheat oven to 325°. Thin out breast (I like to just smash it with my cast-iron skillet). Layer with vegetables. Roll breast up and wrap in the skin. Tie the ends with rope. Place on a cookie sheet and bake for 1 hour. Serve it by itself or serve like I have here with cranberry relish.
