Shrimp Cakes

What’s in it:

  • One pound of shrimp
  • Cilantro
  • Coconut milk
  • Extra Virgin Coconut Oil

How to make it:

Place 1 pound of shrimp, ¼ cup of coconut milk in a food processor, and add in 2 Tbsp of cilantro. Place a thick layer of extra virgin coconut oil in a skillet on high heat. Spoon shrimp spoonfuls into the skillet. Let cook for around 3 minutes on each side. Lay on a paper towel and then plate on a bed of spinach.
